NPR’s Fresh Air radio show recently interviewed Harold McGee, the best-selling author of On Food and Cooking, to discuss his new book “Keys to Good Cooking”. On the programme he discusses issues such as heating up meat, eggs or fish, the efficiency of gas versus electric hobs, and how to make fish crispy.
